A limited and even rare production. Probably one of the best origins of all with an exceptional vanillin content and full crystals on the pods. Direct from Ouvéa, extra frosted Vanilla so rich in vanillin - up to 5% - that it is one of the most sought-after Vanillas on the market and is renowned for being among the best Vanillas in the world.
For 17 years Julien Pascal has been working on his transformation protocol to achieve this extraordinary quality. Victim of its success, there are never enough, he explains, but all it takes is a little elbow grease and everyone rolls up their sleeves to be able to plant more, and tomorrow be able to satisfy all the customers. In Ouvéa he uses poor soils, particularly with all the coconut waste, and manages to cultivate Vanilla vines of great vigor and producing Vanilla pods among the best in the world. Benefiting from an increase in the export market, this quality sector is trying to develop in Ouvéa and is bringing on board more and more growers.
The exceptional quality of Ouvéa's Vanilla pods is already enough to promise a bright future for the island and encourages the natives to consider Vanilla as one of their assets. After difficult years, the producers of this very high quality frosted vanilla hope to soon put nearly 4 tonnes of these highly sought-after pods on the export market.
* Vanillin crystals is the natural end expression of the benzenoid crystal that matures inside the pod. Within properly cured vanilla pods vanillin functions as an important conservative, and its content should be high enough before curing and refining in order to stimulate natural immune resistance to mold and create delicious dark fragrant vanilla smell and flavours. Vanillin crystals are a natural concentrate and a sign of excellent quality of the vanilla pods.
You can recognise them as they shine in the light and look like white spines or literally shiny sharp glass-like tiny “diamonds” of vanilla, such as the THC residue on excellent marijuana plants.
When vanilla pods have this high vanillin content they can be kept for years under excellent storage condition, in glass tubes or glass jars well protected from light. Crystalline beans also have an amazing and powerful smell and tend to dry out over time so the smell and flavor packs into the plant matter but does not diffuse aromatically through the air without interaction or extraction. The flavor literally soaks deep into the skin and seeds and retains inside the pod.
Beans measure +- 20 cm for an average weight of 5g. A kilo is about 200 beans.
