Another amazing vanilla variety from Mexico is the Pompona vanilla beans which are a variety of vanilla beans that are primarily grown in South America, and in Mexico specifically in the states of Jalisco and Nayarit.
These beans are quite unique since they are wild and were naturally pollinated by bees and hummingbirds. Highly prized for their distinct flavor and aroma, which is often described as floral, fruity and spicy, with more tannin and subtle notes of dark chocolate, caramel and tobacco, they are characterized by its plump, fleshy pod and high moisture content. Its size and shape make it ideal for use in cooking and baking, as well as for making vanilla extract.
Mexican pompona vanilla beans are also known for their relatively high vanillin content for this variety, which gives them a strong, sweet, and creamy flavor that is highly appreciated by chefs and home cooks alike.
